Linda Ekström

Linda Ekström’s research is focusing on food design for optimal glucose regulation.

It is possible to make the blood glucose response after a meal more beneficial to health by designing the food product so that the carbohydrates will be released in a more lente way.

The work includes design of candidate food products, physicochemical characterization of the products and testing of the products in meal studies including healthy volunteers.
